A pump creates a major difference between semi commercial and fully commercial espresso machines. While the semi-commercial machine has a vibratory pump, the commercial machine has a rotary vane pump. A rotary vane pump tends to be larger, stronger and more powerful. In a semi commercial espresso machine, the user has to determine the amount of water used. The user also needs to determine the doses and disposal of the coffee beans.
There are mainly two types of commercial espresso machines – Pump Driven espresso maker and automatic espresso machines. A pump driven espresso maker is just an improved version of a piston driven espresso machine. It is the most popular machine in commercial espresso bars. Contrary to the piston driven espresso maker, this machines doesn’t make the use of manual force, but a pump with a boiler.
The high-tech machines particularly made for commercial use have a built-in timer for ‘shots’. The low-end machines have an in-built water reservoir, whereas the higher-end machines can be linked directly to the site. In some models, the boiler is eliminated due a heat-exchanger, which heats the water as it is pumped. On the other hand, automatic commercial espresso machines cost you higher as compared to pump driven machines. The advantage with them is that they make a more consistent quality that the other ones. This is the reason why they are being used in commercial applications.
These automatic machines also need less fine-tuning than pump driven espresso machines. Some automatic espresso machines come with a flow meter, through which, once a previously amount of water is reached; the ‘shot’ is automatically cut.
